Don Eduardo

Also known as Timothy Edward Harbour, originally from England, arrived in Colombia in 2004. He fell in love with Cris, his wife, and the breathtaking landscapes of Salento. Together, they opened the town’s first hostel, The Plantation House, helping to boost tourism by guiding guests to the best experiences in the area.

In 2007, driven by a dream of producing his own coffee, Don Eduardo bought the farm. Since then, he has dedicated himself to creating the most complete, passionate, and unique coffee tour—some might even call it the true American dream.

Our Farm

We are a small boutique coffee farm located in the Andes Mountains of Colombia, in the vibrant town of Salento, at 1,800 meters above sea level. Using clean, traditional techniques and permaculture principles, we cultivate four high-end, pure coffee varietals. Our diverse ecosystem, filled with fruit trees, native plants, and flowers, creates a natural balance that enhances the quality of our organic coffee.

Our tour lasts 3 hours and is available daily at 9:30 AM and 2:30 PM in English. Spanish tours are available upon request.

Our Team

Sabrina

Don Eduardo’s daughter, fell in love with coffee and nature at an early age. At just 14, she began guiding tours and learning every aspect of the farm’s process. Passionate about coffee, she is always expanding her knowledge and loves sharing it with visitors

Don Carlos

Don Carlos leads the cultivation, care, and harvest of our coffee with experience and dedication. His deep knowledge of the land is essential to grow every bean with the quality that defines us.

Don Guillermo

Don Guillermo is a valued collaborator who supports the cultivation process with commitment and care. Alongside Don Carlos, he tends to the coffee plants and ensures that each harvest reflects the honest, handcrafted work that defines our farm.

Our Dogs

An important part of our crew is our dogs, who were some of Don Eduardo’s favorite companions.

Bonnie

Our Old English Sheepdog arrived in 2015 and has always been the leader and protector of the farm. She’s adorable and walks as if she were Miss World. She loves barking at other dogs, horses, and any nearby animals.

Stanley

"Stan the Man," as Don Eduardo liked to call him, is a Newfoundland—a breed known for its rescue instincts. He loves playing with anything that looks like a ball and is always incredibly thirsty, leaving a trail of drool after every drink of wate

Pie / Pianno

She’s the quirky combination of Bonnie and Stanley—a little silly and always eager for pets. The wildest of the pack, when she’s not demanding cuddles, she’s finding new ways to stir up trouble.
